Germany

As a wine producing country, Germany is unique: by far the largest part of the wines is white, and the best of them are almost without exception made from one grape variety, the Riesling grape that for uncomprehensible reasons is underestimated world wide. Red wine from Germany is often Pinot Noir or, as they call it, Spätburgunder.

German wines have long suffered from an image problem: all German wine was considered to be sweet (people still think so today). Yet German wines are increasingly vinified as "trocken" or dry. Having said that, German wine will always have some residual sugar, to juxtapose against the high acidity that Riesling has naturally. German winemakers are always looking for harmony, whereby acidity and minerality are more important than the sweetness of the wine.

 

Where sweetness does become important is when the grapes are harvested late. Sweet wines are classified in tiers: Kabinett (regular quality), Spätlese (late harvest), Auslese (harvest of selected bunches), Beerenauslese (harvest of selected berries) and Trockenbeerenauslese (harvest of selected berries, touched by Botrytis). These latter two can be truly stunningly complex, sweet and acidic at the same time and keeping a wonderful freshness.

 

Icewine is something different altogether: the vintner takes a huge risk by not harvesting a number of bunches and wait for them to get frozen whilst still on the vine. The grapes have to be at a temperature of -7 C° before they are harvested, and pressed immediately. The resulting wine is very concentrated, sweet and has soaring acidity.
