| Over het wijnhuis | Anita Neveu was vroeger professioneel wielrenster. Met dezelfde ‘drive’ stopt ze tegenwoordig al haar energie in het maken van Beaujolais-wijnen op Domaine Anita. Anita gebruikt daarvoor alleen terroirs van hoge kwaliteit. Daarmee maakt ze wijnen van de Gamay-druif die al diverse hoge scores kregen van gerenommeerde critici, waaronder Robert Parker, James Suckling en Wine Enthusiast. |
| Wijngaard en regio | Afkomstig uit de lieu-dit 'Poncié' in de appellatie Fleurie. Deze wijngaard ligt op een ondergrond van roze graniet, op een hoogte van 260 meter, en is gericht op het zuidoosten. De wijnstokken zijn 45 jaar oud. De druiven worden met de hand geplukt en geselecteerd in de wijngaard. |
| Vinificatie | Voor de vergisting worden hele trossen gebruikt. De vergisting vindt gedurende 12 dagen plaats via de macération semi-carbonique techniek, ook wel "Vinification Beaujolaise" genoemd. Dit geeft de wijn een fruitig karakter en zorgt voor een soepele smaakstructuur. Na de gisting rijpt de wijn 6 maanden in cementen tanks en vervolgens 3 maanden in de fles. |
