Druivenras Sangiovese
Over het wijnhuis Het in 2000 opgerichte Toscaanse wijnhuis van de charismatische Bibi Graetz heeft de afgelopen twintig jaar een ware cultstatus bereikt. Het wijnhuis kent met zijn eigenzinnige wijnen én kunstzinnige etiketten vele liefhebbers. Daar hoort ook de internationale wijnpers bij, die inmiddels de topwijnen Colore en Testamatta jaarlijks zeer hoge punten toekent.
Wijngaard en regio Voor Testamatta worden enkel oude wijnstokken gebruikt. De druiven komen uit zes wijngaarden, elk met arme bodems met veel steen. De zes wijngaarden zijn: Vincigliata (in Fiesole, op 230 meter hoogte), Olmo (nabij Fiesole, op 420 meter hoogte), Londa (ten oosten van Rufina), Lamole (in het hart van Chianti Classico, op 650 meter hoogte, stokken van 100 jaar oud), Montefili (net ten zuiden van Florence, 500 meter hoogte) en Siena (op 330 meter hoogte). Tijdens de oogst gaan de plukkers tot wel acht keer door de wijngaard heen om alle druiven op perfecte rijpheid te plukken.
Vinificatie De druiven worden ontsteeld en vervolgens zacht geperst. De wijn wordt spontaan vergist met natuurlijke gisten. Druiven van kleine percelen worden vergist in barriques van 225 liter met een open bovenkant. Voor de grotere percelen worden vaten van 50 hl en RVS tanks gebruikt. Dagelijks wordt zes keer de bovendrijvende druivenpulp naar beneden geduwd en wordt wijn overgepompt. Na de vergisting blijft het sap nog 7-10 dagen in contact met de schillen. Vervolgens rijpt de wijn 20 maanden lang in oude barriques en grote eikenhouten vaten van 50 hl.
Kleur Kersenrood.
Geur Gelaagd en complex. Aardbeien, kersen, sinaasappel. Zomerbloesem. Tonen van rook, thee en aarde.
Smaak Bijzonder gelaagde wijn met een heel zuiver Sangiovese-karakter. Heel sappige frisheid. Zeer precieze tanninestructuur. Complete wijn.
Serveren bij Lekker bij pappardelle met een ragù van wild zijn.

Awards "Made with fruit from all north-facing vineyard sites (mostly in Olmo with a little bit from Lamole), the Bibi Graetz 2022 Testamatta is engineered to showcase the power of Sangiovese. Indeed, many parcels were recently removed from the blend in order to focus on fruit concentration and elegance. This was a hot growing season, but Bibi says that 2021 was also very warm (with more violent heat spikes during the summer). He lost a small percentage (about 7%) of fruit in 2022 and claims to have had an abundance of fruit in the challenging 2023 vintage. This wine is packed with dense berry fruit, blueberry, spice and soft earth. Bright acidic freshness adds backbone to Sangiovese." - Robert Parker's Wine Advocate

"The purity of fruit is so impressive, with al dente fruit character of sliced cherries, cranberries and citrus fruit that’s wonderfully melted together. It’s medium- to full-bodied and grows on the palate, with firm and layered tannins and a long, intense finish. This needs three to four years to refine but is already so enticing. Great beauty. "100% Sangiovese from the Vincigliata, Olmo, Londa, Lamole, Montefili and Siena vineyards. Spontaneous fermentation in open barriques for the small parcels and in 50-hl oak casks and stainless steel for the larger plots with three punchdowns daily. After the alcoholic fermentation had finished, the wine was racked off into old barriques and 50-hl casks where it went through malolactic conversion. The wine was aged in casks for 18 months before bottling. Lustrous crimson. More refined and a little more open and ready than the Colore. Lifted sour cherry and hints of blood orange with a suggestion of cigar box. Supple and polished cherry and raspberry fruit. Lots of concentration and at the same time refined and with a suggestion of oak. A fantastic core of youthful, firm tannins muscling their way in on the finish.
