Over het wijnhuis | In het hart van de Barolo DOCG, in het plaatsje Castiglione Falletto, liggen de unieke cru-wijngaarden van Cavallotto. Cavallotto behoort tot de oudste producenten van Barolo, met een traditionele, op terroir gespitste stijl van wijn maken. De verschillende terroirs van de cru’s Bricco Boschis (met zijn bijzondere 'single vineyard' Vigna San Giuseppe) en Vignolo komen op fantastische wijze tot uiting in hun Nebbiolo-wijnen. Behalve Nebbiolo maakt Cavallotto onder andere een waanzinnige Barbera d’Alba Superiore. |
Wijngaard en regio | Afkomstig van de 'San Giuseppe'-wijngaard in de cru Bricco Boschis in de comune (gemeente) Castiglione Falletto in Barolo. De wijngaard ligt helemaal centraal in de amfitheater-vormige cru. In de wijngaard staan zeer oude druiven: ze werden voor het laatst aangeplant tussen 1932 en 1956. Vigna San Giuseppe heeft een perfecte ligging op het zuid-westen en een zanderige bodem. |
Vinificatie | De druiven worden ontsteeld. De gisting vindt plaats een gecontroleerde temperatuur van 29 graden. De 'hoed' (schilletjes die boven komen drijven) wordt regelmatig ondergedompeld, het sap regelmatig overgepompt. Hierdoor krijgt de wijn meer kleur, tannine en smaak. De totale maceratietijd is 30 tot 35 dagen. De wijn rijpt 48 tot 60 maanden op Slavonisch eiken van 20, 30, 50, 80 en 100 hectoliter. De wijn verblijft vervolgens nog 12 maanden op de fles voordat deze op de markt wordt gebracht. |

From this magical site at the heart of the Barolo appellation comes a wine that represents the very best of vintage and territory. Dark fruit, dried cherry, wild plum, rose and iron ore meet a perfect intersection that gives this Barolo a beautiful sense of balance and inner energy. Fruit comes from a 2.4-hectare plot with southwest-facing vines that are 60 years old. After destemming, the grapes see 28 days of skin contact (semi-submerged caps) in steel tanks. Secondary fermentation occurs in cement in the spring following the harvest. The wine is aged in Slavonian oak for 60 months. Vigna San Giuseppe is located at the top of the cru, where the soils are even sandier than in other parts of the MGA, due to the simultaneous presence of Diano sandstones and sandy Sant’Agata Fossili marls. His 2015 is as much austere as detailed: rose, plum and prune aromas are joined by smoky woodland and a depth of forest floor. Prunes appear on the palate too, with an earthy minerality and muscular yet ripe, sweet tannins due to old vines (around 50 years old). This also displays refreshing acidity and balanced alcohol.
