| Vinificatie | Na de oogst worden de druiven als hele trossen geperst. Alleen de Roussanne ondergaat eerst een schilweking. De gisting vindt deels plaats in RVS en deels in eikenhouten vaten. Na de gisting rijpt de wijn gedurende een korte periode op de gistcellen ('sur lie'). Dit maakt de wijn ronder en romiger van smaak. |
