Over het wijnhuis | De wijnen van Fenocchio zijn traditioneel, zoals het wijnhuis ze al jaren maakt. ‘Meditatiewijnen’. Neem er de tijd voor. En geef deze wijnen ook vooral de tijd. De wijnen van Fenocchio kunnen enorm lang rijpen en worden pas echt interessant na minimaal 10 jaar. |
Wijngaard en regio | De druiven komen uit de cru Castellero, die in de comune Barolo in de DOCG Barolo ligt. De wijngaarden hebben een ligging op het westen, op 280 meter boven zeeniveau. De bodem bestaat uit mergel met tufsteen en veel zand. De wijnstokken zijn rond de 30 jaar oud. |
Vinificatie | De druiven vergisten met een zeer lange inweking van 40 dagen in RVS tanks. De wijn rijpt vervolgens 6 maanden in RVS en 30 maanden in grote vaten (20-25 hl) van Slavonisch eiken. |
