| Over het wijnhuis | Het in 1756 gekochte Meerlust mag zich scharen onder de absolute icoonhuizen van Stellenbosch. Met een rijke historie en een breed scala aan internationale prijzen, behoort het wijnhuis tot de top van Stellenbosch en heel Zuid-Afrika. Het vlaggenschip van Meerlust, dat vrij vertaald ‘het plezier van de zee’ betekent, is Rubicon, een Bordeaux-blend die zich met gemak jarenlang kan ontwikkelen in de fles en kan wedijveren met de top uit Bordeaux. |
| Wijngaard en regio | Afkomstig van verschillende wijngaarden in Stellenbosch, Zuid-Afrika. Cabernet Sauvignon is afkomstig van een wijngaard met een lage opbrengst en een bodem van voornamelijk graniet en grind. De bodem voor de Merlot-druiven bestaat uit klei en is goed doorlatend. Een aantal stukken zijn zeer ijzerrijk. Cabernet Franc is afkomstig van zeer goed doorlatende, stenige bodem met ongeveer 20% klei. Petit Verdot groeit op zogenaamde Oakleaf bodems. |
| Vinificatie | De druiven worden apart gevinifieerd in RVS tanks. Pas aan het einde van de vinificatie én een eerste houtrijping wordt de definitieve blend bepaald. Deze houtrijping duurt negen maanden en vindt plaats in Frans eikenhout, waarvan ongeveer twee derde nieuw. Daarna wordt de wijn geblend en krijgt deze nog een houtrijping voor negen maanden. |

It features a balanced, elegantly powerful palate with refreshing tannins and consistent acidity that keeps everything in check. The finish is notably food friendly, echoing with nuances of lead pencil. After eight months in the barrel, the components were blended and aged for an additional 10 months in barrels. A blend of Cabernet Sauvignon (48%), Merlot (46%), Cabernet Franc (5%) and Petit Verdot (1%), every parcel of each variety was fermented separately before undergoing malolactic fermentation in 300-litre barrels and large foudres. After eight months in barrel, the components were blended and given another 10 months in barrel. The 2021 sees the more mature Merlot vineyards coming more to the fore with almost equal part Cabernet Sauvignon and Merlot in the final blend. RS 2.04 g/l, pH 3.48, TA 5.93 g/l. Dark, with cooked-fruit richness, brûlée and umami. Chocolate and plum, lavender fragrance, deep violet tones and the cool breath of liquorice on the finish. There is a black sheen of minerality at the core, which, together with the fantastic herbal (fynbos?) aromatic lift and fragrance, flood the flaring fan of ripeness with freshness and length.
